In order to take payment on a Sale and be able to then Suspend that sale, you will first need to Disable Sale Quick Complete. You can do this by going into Store Config > Search > Disable Sale > and check the box that says Disable Sale Quick Complete:
In the Sales screen, select your payment type, select Add Payment:
You will then Suspend your sale and this will immediately prompt your credit card terminal:
